Pumpkin pie for Halloween


  • 1kg pumpkin
  • One small pot of condensed milk
  • 200 ml of milk
  • 250 grams flour
  • 250 grams sugar
  • Two eggs
  • 50 grams of butter
  • 200 grams of cookies or one sheet of puff pastry/broken
  • One teaspoon of cinnamon
  • One orange


Pumpkin Pie Base

The ideal mould for this recipe is one of 22 centimetres.

You have two options to make the base of the cake: On the one hand, you can use a sheet of puff pastry or shortcrust pastry to cover the bottom (which we would extend just after having the filling ready), or you can also cover it with cookie dough and butter.

If you choose this last option, it is important that you crumble the cookies well and, when you have it ready, add the melted butter so that a compact dough can be made in the mould you have chosen.

Pour the cookies into it and press down so that it is firm. Put it in the fridge until later.

Pumpkin pie filling

  • Peel the pumpkin and put it in pieces in a saucepan with a little water for about 15 minutes. When you see that the pumpkin pulp is tender, it will be time to remove it, drain the water well and puree it.
  • Place the puree in a tall bowl, and add the other ingredients except for the butter: flour, sugar, condensed milk, milk, cinnamon powder, orange and eggs.
  • Mix all the ingredients well and beat them to have a homogeneous mass and a smooth texture.
  • With the filling ready, we spread it carefully on top of the base of the cake that we have chosen. Put the cake in the preheated oven at 180º for 45 minutes.
  • Once this time has passed, you take it out and let it cool.


To present the cake, there are several options available. For example, you can use whipped cream or cream cheese or sprinkle it with icing sugar and thus take the opportunity to make the Halloween drawing.

Pumpkin pie is served at room temperature, warm or cold (never hot), often accompanied by a scoop of vanilla ice cream or a nice cup of steaming hot chocolate.


For a larger 24-26 cm cake, double all the ingredients, and add a pinch of salt. For a gluten-free version, use rice flour instead of wheat flour. Alternatively, you can leave the pumpkin pie plain and add a smooth chocolate frosting once the pie has cooled, or you can also make this other recipe below.

  • 600g pumpkin
  • 400g cottage cheese
  • Three eggs
  • 150 – 200 g of sugar
  • 100 ml of cooking cream
  • 100 g of dark chocolate (chopped or in nuggets)
  • One teaspoon of ground cinnamon
  • Vegetable oil
  • Sugar
  • couverture chocolate
  • 200 gr of biscuits (better without they are of the «digestive» type)
  • 100g of butter


We start by peeling the pumpkin, from which we remove all the seeds. Then, we must take each piece and bathe it in the oil and sugar.

We place the pumpkin on a tray for the oven (with baking paper or parchment paper), and we must roast it for at least one hour (with the oven preheated to 200º).

After half an hour in the oven, we turn it over so that it cooks on both sides the same. Then, when an hour has passed, it has to be tender.

Prick with a knife or fork to check that it is tender; if not, put it back in the oven and check every fifteen minutes.

Once the pumpkin has cooled, mix it in a bowl with the cottage cheese and sugar. It should be very tender, so much so that it can be broken up with a fork.

Beat all the eggs, mix with the cream and add this to the mixture we have already made with the pumpkin. Again everything is mixed together.


Cinnamon, vanilla essence and chocolate chips are added, and everything is mixed again.

The cookies must be undone in a container and mixed with the butter that must be at room temperature so that it is softer. The mixture should be smooth and like a paste.

Take a baking mould (about 25 cm) and smear it with butter and a little flour. We place a uniform base inside the mould with the biscuit dough and butter and let it cool in the fridge for half an hour.

Add the mixture with the pumpkin and everything else on the biscuit base and bake for about 45 minutes at 180ºC.


When it is done, let it cool for at least 10 minutes before unmolding and wait for it to cool completely. Then, put it in the fridge two hours before serving.


Then we can if we want to add a little chocolate coating that we can apply on top of the cake.

This topping is melted in a bain-marie or microwave, and when it is still hot, it is poured over the cake, leaving it to cool afterwards. Now we can enjoy our Halloween cake!
